Hugo Ensslin, the head bartender at Hotel Wallick, first created the Aviation Cocktail inspired for our kit, in New York City in the early twentieth century. Harry Craddock's influential Savoy Cocktail Book refined the recipe in 1930, introducing the Crème de Violette with two-thirds gin, one-third lemon juice, and two dashes of maraschino. Our Gin-Based Aviation cocktail kit follows this recipe.
